This is my kind of fall soup and one unfamiliar to me that is Ecuadorian in origin. Bright and vibrant, it's packed full of potatoes and cheese. Soft and melty Cayambe cheese was used for its creaminess, but Mireille says queso fresco would be a perfect substitute. Garnished with avocado, tomato or corn, I think I'd be tempted to have more than one bowl.

My contribution this month is a hearty pasta salad employing fresh basil and mint from my garden that I used to make a zesty pesto with some sun-dried tomatoes. I added fresh garden peas too and some jalapeño. It was a satisfying meal, bursting with fresh flavors and easy to prepare too, making it an ideal busy night selection.

I think the picture speaks for itself here. Anything Thai gets my attention and here, the chef wanted something different and warming and tried his hand at making his own noodles. I am sure they did complement the soup beautifully. The vegetable broth base filled out with creamy coconut milk is enhanced further with a divine sounding homemade green paste for some extra kick. Certainly a perfect way to get some warm into our bodies.

Next up we have a gorgeous spicy and creamy potato and lentil soup that employs a generous amount of chipotle. Of course that got my attention. Garnished with a swirl of yogurt if you please, you are in for one delicious meal, especially if served with a bit of crusty bread on the side. Yum!

This is Niki's very first post and I'm flattered that she was inspired by one of my recipes. This healthy salad is just bursting with bold colors and flavors. Easy to throw together, grapefruit, radish, red peppers, beets, radish and cranberries make an appearance along with nutty kamut. The whole thing is dressed with a honey mustard dressing. An intriguing dish packed full of everything good for you.

Janet is another loyal contributor to NCR and her dishes always make me hungry. This purifying salad contains the goodness of lightly steamed broccoli, plump chickpeas, green onion and cilantro. Then it is lovingly dressed with a lemon and honey dressing. Garnish with some pine nuts and you're all set.

Up next is another tempting pasta salad, this time with runner beans. The beans are blanched, tossed with olive oil, balsamic vinegar and some seasoning before being added to the pasta. Shaheen wanted to brighten it up a bit and so tossed in some cherry tomatoes. Sounds good to me.

Up next is yet another soup. As the weather gets cooler, soup is often just the thing we crave, especially when it can be enjoyed outside on a lovely fall day. I put cumin in just about everything, so this one with carrots, coconut, quinoa and other seasonings sounds just fine to me.

Sarah loves soups and she was especially delighted to try out one of her favorites in her new soup maker. This pretty bowl contains sweet potatoes, apple and ginger along with some lemon juice. The she garnished it with ginger pumpkin seeds. With her cooker, it was ready in hardly any time at all.

Dena is not quite ready to give up summer just yet, so to stretch it out so to speak, she served up a colorful watermelon salad with baby greens, cucumber, and feta cheese. Then, the salad is drizzled with ranch (or buttermilk) dressing, followed by pomegranate molasses. The salad is then sprinkled evenly with pepitas before serving. Sounds very refreshing.

Quinoa is one of my favorite grains, so surely this salad would appeal to me. A twist on a classic pasta salad, the nutty grain steals the show here. Tomatoes, cucumbers and bell peppers make an appearance. This salad that would be fit for a gathering is then dressed with a creamy Italian based dressing with some vinegar and a bit of spice thrown in for some extra kick.

Feast your eyes on this bowl of goodness. Corn comes together with carrots, sweet potato, tomatoes, stock and a bit of spice. It's a beautiful whizzed up soup that is garnished with herbs and a swirl of yogurt before serving. Vegetable soups are always a pleasure in the fall.
Recipe: Black Bean, Cucumber and Feta Salad

One of favorite pairings is black beans and feta cheese. Jennifer is trying to add more salads before it gets more like soup weather. This one sounds delicious. I like the addition of cucumber, corn and cilantro, and it's dressed up with fresh lime juice and some seasoning.

Corina wanted to get adventurous with this Indian inspired creation. I love anything with paneer cheese, so of course I want to try it. The paneer gets a spicy marinade treatment and then is fried. It comes together rocket leaves, pomegranate seeds and is topped with yogurt and cucumber raita on the side.
